Instructions
Marinating Beef
Step 1
Crush green chilies, ginger and garlic in a blender.
Step 2
Add this mixture to the beef.
Step 3
Add chilli, turmeric, coriander, pepper and garam masala powders to the beef. Add curd, lemon juice and salt. Mix everything well.
Step 4
Add diced tomatoes to this. Mix and refrigerate the beef for a minimum of 2 hrs
Step 5
After 2 Hours, cook the beef in a pressure cooker for 5 whistles (may vary with the beef)
Cooking the Rice
Step 6
In a wok add 2 tbsp oil and 2 tbsp ghee. Add sliced onions and fry them until they are a mix of crisps and golden brown. Set them aside
Step 7
Fry the cashews and set aside.
Step 8
Wash the rice and add required water.
Step 9
Heat extra oil if necessary and add bay leaf, star anise and cinnamon stick. Stir them for 5 seconds and add this to the rice along with the oil, 1/2 tsp lemon juice and salt.
Step 10
To this add 1 tbsp of fried onions.
Step 11
Set the rice cooker in cook mode and wait until the rice is completely cooked.
Process of Dum
Step 12
Open the pressure cooker with beef. Add 1/2 of remaining fried onions along with a tsp of oil. Heat the cooker until the gravy turns into a creamy texture. (If there's no water add 1/2 cup of water and do this.)
Step 13
Take a vessel suitable to contain the cooked rice and beef for dum process.
Step 14
Set the first layer completely with the cooked beef.
Step 15
Add 1/3 of coriander leaves and mint leaves.
Step 16
Add 1/3 of remaining fried onions.
Step 17
Add 1/2 of the cooked rice.
Step 18
Add next 1/3 of onions and 1/3 of the Coriander and mint leaves
Step 19
Add remaining rice.
Step 20
Add all of the remaining coriander and mint leaves, fried onions, fried cashews and 1/2 tsp of ghee (optional)
Step 21
Cover and cook this for 5 minutes on low heat.
Step 22
Mix and serve hot
