Ingredients
2 servings
1 Tbsprapeseed oil
2garlic cloves
crushed and finally chopped
ginger
peeled and grated
1 Tbspshaohsing rice wine
or dry sherry
200gpak choi leaves
sliced in half on the diagonal
jasmine rice
steamed, to serve
For the pork
250gpork fillet
cut into 5mm slices
½ tspdark soy sauce
1 tsphoisin sauce
1 tsphoney
ground white pepper
1 Tbspcornflour
For the sauce
Instructions
Step 1
Put all the ingredients for the pork, except the cornflour, in a bowl, season with a pinch of salt, and turn to coat the meat evenly. Dust with the cornflour, and set aside.
Step 2
Whisk together all the ingredients for the sauce in a jug, along with 50ml cold water, then set aside.
Step 3
Heat a wok over a high heat until smoking, and drizzle in the rapeseed oil. Add the garlic and ginger and stir-fry for a few seconds to release their flavours.
Step 4
Add the pork fillet and let it settle for 10 seconds to sear & brown, then flip it over. Add the rice wine and toss for another 5 seconds.
Step 5
Add the pak choi leaves, then drizzle 1 tbsp cold water around the edge of the wok to create steam to help it cook. Toss for 30 seconds to wilt the leaves, then pour in the sauce and toss again. Transfer to a serving plate and serve with jasmine rice.
