Crispy General Tso's Tofu

Tofu

350gfirm tofu

2 tspsoy sauce

2 tspmaple syrup

1 tsptoasted sesame oil

1 ½ cupsflour

¾ cupwater

2 ½ cupsoil

Instructions
Tofu
Step 1
Press then pat dry tofu.


Step 2
Break the firm tofu into bite sized pieces.


Step 3
Add the soy sauce, maple syrup and sesame oil then toss and set aside to marinate for a few minutes.



Step 4
Put one cup of flour into a bowl as the dry station and a half cup of flour into another bowl as the wet station. Add 3/4 cup water to the wet station and dissolve the four.




Step 5
Add half the tofu to the dry station and mix until coated then transfer to the wet station and gently coat with batter. Transfer back to the dry station and gently mix until coated again.
Step 6
Transfer the tofu to a plate with minimal touching. The batter should be slightly flaky.

Step 7
Repeat as necessary depending on portion.
Step 8
Heat the avacado oil in a frying pan on medium heat for a few minutes, until a wooden spoon creates small bubbles.


Step 9
Place the tofu into the pan in batches and fry for 4 - 6 minutes until golden brown then gently flip the tofu. Fry for 3 - 4 minutes until other side is golden brown.
Step 10
Transfer the tofu to a cooling rack and fry the remaining batches of tofu. The tofu will continue to cook a little on the rack.

Sauce
Step 11
Add the chili oil to a saute pan on medium heat and saute the garlic and ginger for a few minutes.





Step 12
Add the dried red chillies and saute for another few minutes.

Step 13
Add the maple syrup, oyster sauce, soy sauce, dark soy sauce and black vinegar. Cook for 1 minute.





Step 14
Combine the corn flour and water then pour into the sauce, stirring. If the sauce looks too thick add a little water.



Step 15
Add the tofu to the sauce and mix until coated and hot.
Step 16
Plate the tofu, garnish with sesame seeds and serve with rice.
