Instructions
Step 1
Using a food processor, mince the garlic and set aside.
Step 2
Cut the pork belly into small cubes and place in a bowl. In the same bowl add the ground pork, garlic, brown sugar, salt, black pepper, paprika, oyster sauce, soy sauce, vinegar, and sriracha. Mix until everything is well mixed and incorporated. Place a plastic cover on the bowl and let marinate overnight.
Step 3
The next day you can make them in to sausage links. Cut small rectangles of parchment paper. Place a spoonful of longganisa in the middle of the parchment paper. Fold it over lengthwise, then with pressure, slide it towards you to make a sausage link. Roll the link over the remainder of the parchment. Repeat and store in a ziplock bag and store in the fridge or freezer. If you are in a rush, make sausage patties instead.
Step 4
Fry the links or patties on medium low heat with a little oil until browned on both sides. You can also cook them in the air fryer for 5-7 minutes at 375* F.
Step 5
Best served warm with a side of garlic rice and fried eggs.
