Ingredients

For the Salmon Tartare:
300gsalmon
sushi-grade, skinless, boneless, finely chopped
0.5lemon
Juice of
½ tsprice vinegar
1 Tbspolive oil
2 tspmustard
1 Tbspshallots
finely chopped
1 Tbspchives
finely chopped
1 Tbspcapers
chopped if large
salt
to taste

Instructions
Step 1
1. In a bowl, combine all ingredients for the salmon tartare. Mix well, then chill in the fridge for at least 30 minutes before serving.

2. Preheat your oven to 190°C (fan). Using a 10cm cookie cutter or knife, cut 3 rounds from each tortilla. Press each tortilla round into a greased muffin tin, shaping them with your fingers. Lightly spray with olive oil and bake for 7-8 minutes, or until golden and crispy.

3. In a food processor, blend all ingredients for the avocado mousse until smooth.

4. To assemble, spoon about 2 teaspoons of avocado mousse into each tortilla cup, then top with a generous amount of salmon tartare. Garnish with chopped chives and enjoy!
