Creamy peanut noodles

Ingredients
4 servings
200gdried egg noodles
100gmangetout
300gpeeled prawns
cooked
3spring onions
thinly sliced
2 Tbspdark soy sauce
2 Tbsprice wine vinegar
1 Tbspsriracha
depending on spice preference
1 Tbspsesame oil
6 Tbspcrunchy peanut butter
2 Tbsprunny honey
3 clovesgarlic
peeled and finely grated
4 cmfresh ginger
piece, peeled and finely grated
1red chilli
large, deseeded and finely chopped
lime wedges
to serve
Instructions
Step 1
Bring a large saucepan of water to the boil and cook the noodles according to the packet instructions, then drain, reserving some of the cooking water.

2. Steam the mangetout in a steamer for 2-3 minutes until cooked but still crunchy.

3. In a large bowl, mix together the peanut sauce ingredients with

4 tablespoons of the reserved noodle water.

4. Add the noodles to the peanut sauce along with the prawns, mangetout and spring onions, then toss to combine.

5. Transfer to airtight containers and add the lime wedges, then store in the fridge for 3-4 days.
