Instructions

Step 1
Step 1: Cut the beef into cubes and marinate with light soy sauce, minced garlic and black pepper. Marinate for 10 minutes. Air fry the French fries according to the package instructions.

Step 2: Prep the sauce. In a bowl, add light soy sauce, oyster sauce, red wine vinegar, corn starch and sugar. Optional : aji amarillo paste (if available)

Step 3: Cut the red onions into 1/2 inch thick pieces and cut the tomatoes into quarters, then remove the seeds.

Step 4: Make the aji verde sauce with ingredients listed for the sauce.

Step 4: In a large pan, add oil and wait until it’s hot. Sear the beef for 1-2 minutes per side, then remove from the pan. Using the same pan, add red onions and garlic then cook for 2 minutes. Add beef and sauce then cook for 1 minute. Add French fries and tomatoes then toss together for 30 more seconds.
Step 6
Serve immediately with steamed rice and aji verde sauce.
