Instructions

Step 1
Add pork with the listed powders to a pan with water. Use 1 tbsp Corriander, 1/2 tbsp blk ppr, 1 tsp garam masala, 1tsp salt, 1inch chopped ginger, 6 cloves of chopped garlic

Step 2
Turn on high heat and wait for water to boil.
Step 3
Stir once well and set the heat to medium and cook closed for 30 mins. Stir every 5 mins
Step 4
Make sure pork is cooked. Can use any excess fat for the next step if any.
Step 5
Heat oil in a pan and add remaining ginger, garlic, green chilli and curry leaves. Mix well and add the shallots and/or onions with 1 tsp salt. Stir occasionally till onions turn golden brown color.

Step 6
Set the heat to low and add 1 tbsp corriander and 1/2 tsp garam masala/meat masala. Still about 30 secs to toast the powders.

Step 7
Add pork to the mix with 1 cup hot water and 1/2 tbsp lime juice.

Wait for it to boil and close lid and wait for 3 mins
Step 9
Add the 1 tbsp black pepper powder and mix. Then turn off heat.
Step 10
Set aside for about 20 mins and serve
