Instructions

Step 1
In a large mixing bowl, dissolve the yeast in warm water. Let it sit for 5 minutes until it begins to foam.
Step 2
Add in the flour, salt, sugar, and 2 tablespoons of the olive oil. Mix until a soft dough forms.
Step 3
Turn the dough out onto a floured surface and knead for 10 minutes until smooth and elastic.
Step 4
Place the dough into a greased bowl and cover with plastic wrap. Let it rise in a warm place for 1 hour or until doubled in size.
Step 5
Preheat your wood-fired oven to 450°F.
Step 6
While the oven is heating up, mix the chopped garlic with the olive oil, grated parmesan cheese, salt, and pepper in a small bowl.
Step 7
Cut the dough into 12-16 pieces and toss them in the garlic olive oil mixture.
Step 8
Place them in a cast iron skillet.
Step 9
Bake for 5-6 minutes, or until the knots are golden brown.
Step 10
Serve hot and enjoy your wood-fired garlic knots!
