1 teaspoonground cumin
1 teaspoonsmoked paprika
½ teaspoondried thyme
½ teaspoondried oregano
¼ teaspoonblack pepper
2 cupfresh spinach
1 tablespoonlemon juice
Fresh parsley
chopped, for garnish

Step 1
1. Prepare Ingredients: • Dice the onion, mince the garlic, chop the carrots, celery, bell pepper, and zucchini. 2. Add to Crockpot: • Place the lentils, onion, garlic, carrots, celery, bell pepper, zucchini, diced tomatoes (with juice), vegetable broth, cumin, smoked paprika, thyme, oregano, black pepper, and bay leaf into the crockpot. 3. Cook: • Cover and cook on (low) for 6-8 hours or on (high) for 3-4 hours, until the lentils and vegetables are tender. 4. Finish: • About 15 minutes before serving, stir in the chopped spinach or kale and lemon juice. Cook until the greens are wilted. 5. Serve: • Remove the bay leaf, and ladle the stew into bowls. Garnish with fresh parsley
