White Chicken Chili

Step 1
Prep the veggies: chop the green pepper and onion finely.
Step 2
Over medium-high, heat a splash of olive oil in a large pot. When it starts to smoke,add chicken, garlic powder and chili powder. Add salt and pepper to taste. Sear untilgolden brown, about 1 minute on each side.
Step 3
Add green pepper, onion, beans (including the liquid), coconut milk and salsa verde.Give everything a good stir. Bring to boil, reduce heat to medium-low, cover andsimmer for 45 minutes.
Step 4
When the timer runs out, remove the chicken breasts. Using two forks, shred thechicken into small pieces. Return the shredded chicken back into the pot andcontinue to cook for another 5-10 minutes.
Step 5
Remove from heat and let rest (the flavours will continue to develop).6. Serve the white chili with slices of jalapeno, cilantro and chili oil. Enjoy!
