Important Notes:
To prevent the tortillas from breaking when rolling them, heat them one by one on a pan with the stove on low heat for approximately 30 seconds on each side.
Storing & reheating:
Take one burrito out of the freezer, remove from foil, wrap in a paper towel & microwave for approximately 2 min - this step thaws the burrito allowing it to warm up in the middle. Now air fry at 190C/375F for around 5 - 8 min (time may vary slightly depending on the air fryer - for this last step you can also oven bake or pan fry the burrito)

Cooked, mixed with cilantro/coriander - 100g per burrito, amount can be adjusted to suit your liking
Instructions
Step 1
Start by seasoning the chicken breast with the specified seasonings.

Step 2
Use a cooking oil spray and either air fry or pan fry the chicken according to the settings provided ( Air Fry: 190 °C /16 - 22 min; Pan Fry: Medium Heat / 5 - 6 min per side) until fully cooked.
Step 3
In a blender, combine cottage cheese, ranch seasoning, chipotle sauce, lime juice, diced garlic, and light mayo.
Blend until the mixture is smooth and creamy.

Once the chicken is cooked, dice it into small pieces.
Step 5
In a large bowl, mix the diced chicken with the creamy sauce, adding mozzarella cheese, cooked and diced bacon, and chopped chives. Mix until well combined

Take a warm tortilla and add a portion of cooked white rice with cilantro.
Step 7
Evenly distribute the chicken mixture over the rice and add some more chives. Roll the burrito tightly to secure the filling.
Step 8
Once rolled, toast the burritos in a pan or grill until they are golden brown and crispy.
Step 9
Repeat the process for the remaining tortillas to make a total of 10 burritos.
