Instructions
Step 1
Cook the pasta according to package instructions. Drain and save some of the pasta water
Step 2
While the pasta cooks, cut the vegetables into small pieces.
Step 3
Put some oil in the pan and cook the onion and garlic for 2-3 minutes. Then add aubergine and courgette, and cook for another 5 minutes
Step 4
Add the grilled paprika slices and cherry tomatoes, including the listed seasonings. Cook for another 3 minutes
Step 5
Add drained pasta with red pesto. Add pasta water accordingly to make a smooth sauce.
Step 6
Finally, add the grated cheese. Taste and adjust the seasoning to your liking.
