Guga's Italian Style Sprite Lemon Chicken

Am experiment from Guga's "Sous Vide Everything" channel on Youtube. It is a modern and delicious spin on an old classic.

Chicken
Step 1
Season your chicken breasts with Salt, Pepper, and Lemon Zest
Step 2
Place in a container and submerge in Sprite. Marinate overnight.
(If marinating in a vacuum sealed container you only have to marinate for approx 2 hours.)
Step 3
Place Marinated Chicken Breasts into vacuum sealed bags for Sous Vide. Then cook them at 149 degrees (F) for 2 hours.
Sauce
Step 4
Melt 1 stick (8 tbs) of butter in a sauce pan over medium heat.
Step 5
Once the butter is melted add the minced garlic and Sautee until just starting to brown,
Step 6
Next add one cup of Sprite to deglaze the pan, then add one cup of chicken stock, followed by 3 tbs of lemon juice.
Step 7
Finally while whisking vigorously add 1 cup of heavy cream. Keep whisking until sauce is fully emulsified.
Step 8
Add a good amount of Parsley and serve. On the side or over the finished chicken.
Finish Chicken
Step 9
Melt another 8 tbs of butter in a frying pan over medium heat.
Step 10
Lightly coat the cooked chicken breasts in flour and shake off any excess.
Step 11
Lightly fry the chicken in the butter till golden brown. ** Note: Remember the chicken is already cooked so all we are doing in this step is giving it a light crispy crust.
