Instructions
Step 1
Chop garlic, red pepper, and cubanelle peppers, tofu, and cilantro.
Step 2
Heat oil on medium high heat (on 6) in a large pot.
Step 3
Add garlic and cook until fragrant and it's just starting to "toast", or approximately 30 seconds to a minute.
Step 4
Add red pepper, cubanille peppers, 1/2 packet of Sazón Goya, and 1/2 tsp cumin. Cook for a few minutes but leave peppers slightly undercooked for your preference. Remove from heat, pour into a bowl and set to the side. (tip : wipe oil off side of the pot before placing it back on the heat)
Step 5
Add more oil to the pot, allow it to come to temperature, then add the tofu, 1 1/2 packets of Sazón Goya, and 3/4 tsp cumin. Cook for about 8 minutes, only stirring occasionally, or until the tofu starts turning dark orange overall. (Stirring too often will cause the tofu to crumble)
Step 6
Add cooked peppers and garlic back into the pot. Add in chopped cilantro. Stir until combined. Remove from heat after a minute or two.
