Instructions

Step 1
Pre heat oven 200°c
Step 2
Chop cauliflower, add to oven dish with gnocchi, evenly spread for roasting. Tear halloumi and add to dish.drizzle olive oil, turmeric, salt and pepper and toss together. In oven for 20 minutes
Step 3
Make a picked onion: thinly slice red onion. In a bowl, sprinkle vinegar and a pinch of sugar to onions. With finger, massage together to break down and pickle.
Step 4
Pull dish out and stir through the spinach and back in for 5 minutes.
Step 5
Serve: a dollop og Greek yogurt in middle of plate. Spoon cauliflower bake on top and sprinkle onions on top.
