Instructions

Step 1
Cook zucchini, uncovered, in boiling salted water for 1-2 minutes. Drain well.
Step 2
Cook ground beef with onion and garlic. Drain fat. Stir in rice, tomato sauce (I use 15 ounces tomato paste plus enough water to thin it to sauce consistency. ) Combine cottage cheese and egg.
Step 3
Arrange the zucchini slices in bottom of 11x7 baking dish. Spoon the meat mixture over. Spread cottage cheese mixture over meat.
Step 4
Bake at 350° for 20 minutes. Sprinkle cheddar over, and bake 10 minutes more.
