Step 1
Optional: If using dried sundried tomatoes (instead of in oil), soak them in just enough boiling water to cover for 30 minutes. Use the leftover water as the base for your broth.
Step 2
In a large skillet over medium heat, Sauté a drizzle of olive oil, sundried tomatoes, and garlic until fragrant.
Step 3
Add in uncooked gnocchi, chicken (if frozen), Greek yogurt, cream cheese, and broth of your choosing. Stir and cook on medium heat for about 5 minutes.
Step 4
Add in chicken (if not frozen) and spinach. Cook until chicken is warmed through and spinach is wilted. You may need to add spinach in batches depending on the size of your pan. If the sauce thickens too much, you may need to add some water to the top of your spinach to help it wilt.
Step 5
Top with cheese and serve.
