Instructions
Step 1
Mix cottage cheese with sugar with a food processor or immersive blender until creamy

Step 2
Add flour and raisins and mix with hand or spoon until blended well
Step 3
Roll out in a long tube and cut 1cm pieces
Step 4
Make small patties out of the pieces and fry in a pancake pan on medium heat on both sides until golden brown (or a bit darker for a crispier bite)
Step 5
Serve topped with maple syrup, honey or pinecone preserve, berries and powdered sugar. I also like to add some dried sage and thyme for extra flavour
