Instructions
Step 1
Scrub and debeard the mussels, discarding any dead ones.
Step 2
In a pot over medium heat, melt butter and sweat lemongrass, shallots, garlic, and ginger until fragrant, about 2 minutes.
Step 3
Add sake and fish sauce. Bring to a boil.
Step 4
Add the mussels and cover the pot. Steam for 6-8 minutes until the mussels have opened up.
Step 5
Finish with the cilantro and basil.
