Peel potatoes then cook in salted water or in a steamer until fork tender then let them air dry for 5 minutes and mash until smooth

Add salt and pepper to taste followed by nutmeg eggs flour and potato starch ( use cornstarch if you can’t find potato starch) mix everything until it forms a dough then divide the dough into 4 and roll into a long sausage shape . Cut the dough into small pieces then roll each one into an oval

Cook the schupfnudeln In generously salted boiling water for a few minutes on a medium high heat until they float to the surface ( dont have the water boiling as it may break them) toss them into a frying pan with some butter to brown add more seasoning if you like then I like to add Parmesan and parsley but they are just as good with nothing else . Serve and enjoy .
