Instructions
Step 1
Preheat large skillet over med-high heat
Step 2
Pat chicken dry and season with salt and pepper on both sides
Step 3
Once skillet is hot, add 1 tbsp oil and swirl to coat bottom
Step 4
Add chicken and pan fry until golden brown and cooked through, about 3-4 mins per side.
Step 5
Transfer chicken and juices to a clean plate and cover loosely with foil
Step 6
Add 1 tbsp oil to skillet and add mushrooms and garlic. Cook for 4-5 mins until mushrooms soften
Step 7
Add cream cheese in small chunks, parmesan cheese, broth and spices and stir until cheese is melted and combined
Step 8
Bring to a simmer and cook until thickened stirring occasionally, about 3-4 mins
Step 9
Add noodles to pan in small amounts at a time
Step 10
Add spinach in small amounts allowing to wilt slightly before next handful is added
Step 11
Return chicken and juices to skillet and coat with sauces
Step 12
Divide, serve and enjoy
