Instructions
Step 1
Chop the onions and mince the garlic. Cut the bacon into cubes. Remove sinew from livers if necessary. Put a bit of flour on the livers.
Step 2
Cook the bacon on medium heat, letting the fat render. Take it out after it turns crispy.
Step 3
Saute the onions in the bacon fat until mostly soft.
Step 4
Add the livers and gently brown them for 2-3 minutes. In the last 30 seconds of cooking, add the garlic and tomato paste.
Step 5
Deglaze with white wine. Add balsamic vinegar, soy sauce, herbs, and brown sugar. Put most of the bacon back in.
Step 6
Bring to a boil, then cover and turn the heat down to low. Cook for about half an hour.
Step 7
Put the reserved bacon on top of the stew when serving.
