2 cupsjasmine rice
3 cupschicken broth
1 lbground chicken
1onion
diced
1red bell pepper
diced
1can black beans
1can corn
3 clovesminced garlic
2 Tbspwhite cooking wine
2 Tbsptomato paste
1 Tbspolive oil
2 tspsalt
3 tspblack pepper
½ tspred pepper flakes
½ Tbspcumin
1 Tbspcajun seasoning
½ Tbspold bay seasoning
1 Tbspbutter
Instructions
Step 1
Heat olive oil in a Dutch oven over medium heat. Add the butter, and once melted add in the onion and bell pepper. Season with salt, pepper and red pepper flakes. Cook for about 3 minutes or until softened. Add in the garlic and cook for another minute. Add in the white cooking wine and tomato paste, stirring well until combined.
Step 2
Toss in the ground chicken and add the rest of your seasonings. Stir together until well mixed and cook until the chicken is barely pin. Add in the rice, canned black beans, and corn. Once combined, add the chicken broth, and cover with a lid. Simmer on medium-low for about 20 minutes.
Step 3
Once completed, top with shredded cheese if desired and replace the lid to melt the cheese. Serve.
