This rice is wonderfully flavorful and very quick to prepare . Gently spiced but not spicy and lovely and sweet with the tomatoes ! It’s loved by everyone in our house even the little ones . Enjoy .

Add in the grated carrot diced pepper and washed rice . Make sure you have washed the rice until the water runs clear .

Add in the tomatoes bay leaf and peas season with salt and black pepper to taste then cover with a good quality vegetable broth and bring to a boil. Cover with a lid reduce the heat to low and cook for 15 minutes .
