Instructions
Step 1
Peel chop mangos and add to a blender and strain the mango fibers
Step 2
Saute garlic and 1/4 tsp in hot EVOO
Step 3
Add blended mangos, chili flakes and sugar combine and cook with the garlic for 1 minute
Step 4
Add vinegar, salt and half of the water and cook 2 more minutes
Step 5
Make a slurry with the corn starch and remaining water and add to the mixture. Cook for 2 more minutes
Step 6
Adjust for the heat by adding more chili flakes or chopped green chilis
Step 7
To adjust for thickness: if too thick add additional water, if too thin add additional slurry
Step 8
Bottle, cool and keep refrigerated
Step 9
This recipe can be doubled
