Step 1
Adjust an oven rack to 6 inches from the heating element and preheat the broiler to high. Line a sheet pan with foil.

Pat the chicken dry all over and season with 1 teaspoon kosher salt. Place on the prepared sheet pan and broil until lightly browned on both sides and cooked through in the center, about 5 minutes per side.

Meanwhile, in a small bowl, combine the gochujang, honey, and 1 tablespoon extra- virgin olive oil and stir until combined. Set aside half of the glaze for serving.
Step 4
When the chicken is done, use a spoon or brush to coat both sides of the thighs with the remaining glaze. Switch the broiler setting to low. Return the pan to the oven and broil the chicken until the glaze starts to form a crust and the edges start to brown, 2 to 3 minutes.
Step 5
Divide the rice among four bowls. Slice the chicken and top the rice bowls. Arrange the cucumbers next to the chicken and season with a pinch of kosher salt. Drizzle the reserved glaze over the chicken. Top with the sesame seeds and scallion greens and serve.
