Step 1
Dice white onion, and tomatoes.


Step 2
Mince garlic.

Step 3
Mix and grind cardamom pods, sweet paprika, turmeric, and allspice.

Cut gold potatoes into bite sized pieces.

Step 5
Rinse jasmine rice. Drain. Repeat until water runs clear.

Step 6
Cut chicken thigh in cubes.

Cooking Instructions
Step 7
Heat olive oil in a medium skillet. Brown chicken.


Step 8
Heat olive oil in large dutch oven.

Step 9
Add white onion and sauté over medium heat until translucent.

Step 10
Add garlic and sauté for 5 minutes.

Step 11
Add tomato paste and spice blend and sauté for 3 minutes.




Step 12
Add potatoes and diced tomatoes and sauté for 5 minutes.


Step 13
Add rice and chicken broth and bring to a boil while stirring.


Step 14
Reduce heat to a simmer.
Step 15
Add salt and pepper to taste.


Step 16
Simmer for 45 minutes until potatoes are soft and chicken shreds.
