Ingredients

2fresh limes
¼ cupsoy sauce
4 clovegarlic
crushed
1 tsporegano leaves
½ tspthyme leaves
cayenne pepper
3 sprigparsley
1bay leaf
1 lbspork tenderloin
cut in 1" cubes
1 Tbspolive oil
1 tspbrown sugar
2onions
med, cut into 8 pieces
2tomatoes
med, cut into 8 pieces
1red pepper
lg, cut into 8 pieces
1green pepper
lg, cut into 8 pieces
Instructions
Step 1
Remove peel from limes. In small bowl combine lime juice and peel, soy sauce, garlic, oregano leaves, cayenne pepper, parsley, and bay leaf; blend well.
Step 2
Place pork cubes in plastic bag or nonmetal bowl. Pour marinate mixture over pork, turning to coat.
Step 3
Seal bag, marinate for at least 2 hours or overnight in refrigerator, turning pork several times.
Step 4
Remove lime peel, parsley sprigs and bay leaf from marinade; discard. Drain pork well.
Step 5
Heat oil in large skillet over high heat. Add brown sugar; stir until brown sugar is brown and bubbly
Step 6
Add pork cubes, cook and stir about 5 minutes or until pork is browned. Reduce heat to low
Step 7
Add onions, tomatoes, peppers and reserved marinade simmer 10 to 15 minutes or until pork is tender.
