Instructions
Step 1
Preheat the oven to 200 degrees Celsius. Cut the zucchini in hand and scoop out the insides. Put them aside.
Drizzle olive oil over the zucchini and roast in the oven for 10 minutes
Step 2
Fry the onion in 1 tsp olive oil. Then add the garlic, insides of the zucchini and chicken. Cook for 5 minutes
Step 3
Add the tomatoes, sun-dried tomatoes, orzo and stock. Cook for 10 minutes
Step 4
Add the pesto and ricotta. Let thicken until a scoopable consistency. Add seasoning to taste
Step 5
Put filling in the zucchini boats, put grated parmesan on top and put back in the oven for 15 minutes
