Instructions

Step 1
Preheat oil in fryer Chop 1 potato into nice sized cubes and place into fryer.
Step 2
Fry your bacon...I use 4 pieces cut in the middle, and fry well...remove and set aside
Step 3
Scramble 3 eggs in a bowl, add a splash of low fat milk and set aside
Step 4
Chop onion, garlic, and jalapeno into small cubes...in same skillet with bacon grease still going add all the ingredients
Step 5
Add a pinch of salt, pepper and garlic to taste.
Step 6
Once onion, garlic and jalapeno is a transparent look...add the potatoes, and crumble up the bacon you set aside
Step 7
Once potatoes get a Lil brown add your scrambled eggs
Step 8
Once egg mixture is ready last step is to add spinach...once spinach withers a bit turn off heat
Step 9
Warm your flour tortilla over fire, then combine the mixture in your Tortilla with cheese hot sauce. Hey, catch up, fold and enjoy
