Ingredients
2 servings
⅔ cupdry red lentils
rinsed
2 cupswater
1vegetable stock cube
crumbled
0.5red onion
diced
0.5cucumber
cut in half lengthways then sliced
1celery stalk
sliced
1spring onion
sliced, to serve
mint leaves
to serve
Dressing
Instructions
Step 1
Put the lentils and water, along with the stock cube, in a pot over medium heat. Bring to a gentle simmer and cook until lentils are tender and have absorbed the water, about 8 to 10 minutes.
Step 2
Meanwhile, in a small bowl mix the dressing ingredients until combined.
Step 3
Put the cooked lentils, red onion, cucumber and celery in a large bowl. Pour in the dressing and toss until everything is well coated.
Step 4
Serve in bowls, topped with spring onion and mint leaves.
