Instructions

Step 1
Cook the quinoa: Cook quinoa according to package instructions.

Prepare the filling: In a skillet, sauté onion and garlic until softened. Add black beans, cooked quinoa, cumin, salt, and pepper. Stir to combine.

Stuff the peppers: Stuff the bell peppers with the quinoa and black bean mixture.
