METHOD
1.Preheat your oven to 200°C. Line a baking sheet with baking paper. 2. Mix the breadcrumbs, shredded parmesan cheese, garlic powder, dried oregano, salt, and pepper in a bowl. 3.Place the beaten eggs in another bowl. 4.Crack eggs into another bowl and whisk with a fork.
5.Dip chicken breasts into the eggs, then coat it with the breadcrumb mixture, pressing lightly to adhere.
6.Heat 10ml of olive oil spray in a large pan over medium-high heat. Cook the chicken schnitzels for 2-3 minutes on each side until golden brown. Transfer to the prepared baking sheet and finish cooking in the oven for about 10 minutes, or until the chicken is cooked through.
7.Lower the oven temperature to 180°C. 8.Spreada thin layer of tomato sauce over each chicken schnitzel, followed by the shredded mozzarella
9. Place the baking sheet back in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
