Step 1
In a bowl, mix lemon zest, lemon juice, garlic, ginger, honey, salt, and pepper. Toss the chicken bites in the marinade and let sit for 20-30 minutes.

In a saucepan, combine jasmine rice, coconut milk, water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer until the liquid is absorbed about 15 minutes. Fluff with a fork.

In a bowl, combine diced pineapple, mango, red onion, cilantro, lime juice, jalapeño if using, and a pinch of salt. Toss gently and set aside.
