Instructions

Step 1
Sauté the onions in a sauté pan with oil over medium heat until softened.
Step 2
Add garlic, sun-dried tomatoes, basil, rosemary, zucchini, vegetable stock, and chopped tomatoes. Bring the dish to a boil, then let it simmer uncovered for 10 minutes to reduce slightly.
Step 3
Stir in the ricotta, then gently fold in the gnocchi. Season well with salt and pepper. Transfer the mixture to a greased ovenproof dish.
Step 4
Tear the mozzarella into smaller pieces and spread it over the dish. Sprinkle with Parmesan or another hard cheese and bake in a preheated oven at 180°C (fan-forced) for about 15-20 minutes, until the cheese has melted and started to turn golden.
Step 5
Serve with freshly grated Parmesan and a sprinkle of basil.
