Instructions
Step 1
In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and garlic, and sauté for 5-7 minutes until softened.
Step 2
Add the lentils, diced tomatoes, vegetable broth, cumin, turmeric, bay leaf, salt, and pepper. Stir well.
Step 3
Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes, or until the lentils are tender.
Step 4
Remove the bay leaf and adjust seasoning if needed. Serve hot.
