Instructions

Step 1
Start by preparing the zucchini. Wash it thoroughly and slice it into even rounds or strips, about 0.5 cm thick, to ensure even cooking. Sprinkle the slices lightly with salt and pepper to enhance their flavor.
Step 2
Heat a grill pan or outdoor grill over medium-high heat. Lightly brush each zucchini slice with olive oil on both sides to prevent sticking and to add a slight crispness during grilling. Place the slices on the hot grill and cook for about 2–3 minutes per side until they are tender and show beautiful grill marks. Once done, transfer the grilled zucchini to a serving plate.
Step 3
While the zucchini is still warm, crumble the feta cheese over the slices, allowing it to slightly soften from the residual heat. Sprinkle a pinch of dried mint evenly over the dish to add a refreshing herbal note. Finish by drizzling a small amount of olive oil over the zucchini and feta, then serve immediately for the best flavor and texture.
