Ingredients

1 cupraw chickpeas
soaked for a few hours or overnight

baking soda

2 Tbsplemon juice

2cloves garlic

1 tspsalt

½ tspcumin

2 Tbspextra-virgin olive oil

2 Tbspwater
cold

⅓ cuptahini

2ice cubes
Instructions
Step 1
Place chickpeas in a pot and fill with water
about 1 inch (2 ½ cm) over the chickpeas.
Add baking soda and bring to a boil. Lower
the heat and let it cook on a low boil for 1-2
hours, stirring every once in a while.
Check if it's ready by taking out a chickpea
after about an hour, letting it cool a bit, and
then mashing it between your fingertips. It
should be soft on the inside. If it's hard to
mash and dry and crumbly inside, let it cook
for another 30 minutes and check again.
When ready, drain and cool completely.
This step can be done a day in advance, just
drain and refrigerate.
Step 2
Place the chickpeas in a food processor or
blender. Add all remaining ingredients except
the ice. Blend until it starts to mash. It should
be very thick. Add 2 ice cubes and keep on
processing. The chummus should start to
thin out and become smooth. If needed, add
more ice one at a time to adjust the texture.
