Instructions

Step 1
combine ricotta, sour cream, egg (if using), half the mozzarella/provolone, half the feta. Lightly season. Set aside
Step 2
saute chopped onion in olive oil until soft; add garlic, salt, peppers. Add chopped sausage. Brown. Add tomatoes. Simmer. Add spinach at the very end.
Step 3
Cook ziti until about halfway cooked. Save about a half cup of pasta water.
Step 4
Drain ziti. Return to pot. Add half the sauce. Add cheese mixture.
Step 5
Put half the leftover sauce in lasagna pan. Put ziti mixture on top. Finish off with half the sauce and the rest of the cheese, plus some romano and maybe some herbs.
Step 6
Bake at 375 for 45 minutes. Cover if top gets too brown.
