Ingredients
7 servings
1 cupbrown rice
½ cupwild rice
¾ cupbarley
oil
3leeks
thinly sliced
2red sweet peppers
roasted
½ cupsultanas
chopped
½ cupdried cranberries
roughly chopped
½ cupdried turkish apricots
chopped
½ cupitalian parsley
roughly chopped
1 cupcashew nuts
toasted
½ cuptoasted pine nuts
6spring onions
with tops chopped
Dressing
Instructions
Step 1
Cook brown rice separately, drain and cool
Step 2
Boil wild rice, strain and cool
Step 3
Soak barley in water and steam until just tender
Step 4
Mix all 3 of the above in a large bowl
Step 5
Deep fry leeks and stir into cooked grain
Step 6
Cut peppper into strips and add
Step 7
Stir in remaining ingredients
Step 8
Mix dressing and stir into the salad
Step 9
Cover and leave in fridge for 24 hours
