Instructions
Step 1
Prep all vegetables Melt butter and soften sliced onions,fennel and celeriac over medium heat for about 3 mins
Add a few dashes of white pepper and cook one more min
Add 7 cups vegetable stock, bring to a boil over high heat then reduce to med low and simmer for 45 mins or until vegetables are soft
Purée the soup
Add some parsley and purée
Check taste for salt and pepper and add as desired
