Crispy prosciutto, soft scrambled eggs, cheese and chilli jam make these savoury breakfast croissants a delicious make-ahead breakfast for the week. They crisp up perfectly when reheated in an oven or an air fryer. Best served hot.

Step 1
1. Preheat the oven to 200 ° C (180 ° C fan/ 400 ° F/ Gas 6) and line a baking tray with baking paper.

2. Lay the prosciutto out on the prepared baking tray and bake in the oven for 5–6 minutes until crisp. Alternatively, cook in an air fryer in two batches at 200 ° C for 3–4 minutes.

3. Meanwhile, whisk the eggs in a bowl and season with salt and pepper. Heat a few sprays of low-calorie cooking spray in a large frying pan over a low heat, add the eggs and scramble for 5–6 minutes until cooked through but still soft.

4. Open up the croissants and top with the cheese slices, then the crispy prosciutto, scrambled eggs and chilli jam.

5. Transfer to airtight containers or wrap tightly in tin foil and store in the fridge for up to 3 days.

6. When ready to eat, reheat the croissants in an air fryer at 180 ° C for 3–4 minutes.
