Mild Salsa

3Roma Tomatoes
Diced

⅓ cupred onion
diced

0.25 Cupjalapeño
diced

1juice of lime

0.5juice of lemon

¼ tsppepper

½ cupcilantro
chopped
Medium Salsa (Salsa Verde)

2 lbsgreen tomatillos

1Roma tomato
halved

2jalapeños
de-seeded

0.5red onion

3cloves garlic

½ cupcilantro

1 tspcumin

1 tsporegano

salt
to taste

pepper
to taste

1juice of lime

1juice of lemon
Hot Salsa
Instructions
Mild salsa
Step 1
Dice all ingredients and mix in a mixing bowl.
Medium Salsa
Step 2
Roast the halved green tomatillos at 500F for 20 minutes.
Step 3
Blend all ingredients together (leave it chunky)
Hot Salsa
Step 4
Roast halved green tomatillos at 500F for 20 minutes.
Step 5
Toast chiles and garlic in pan for 45 seconds.
Step 6
Toss all in blender.
Step 7
For medium and hot salsa, add 1/4 white vinegar for storage (shelf life could be about 3 months in fridge)
