Instructions

Step 1
Preheat the oven to 180°C (350°F).
Step 2
Rinse pearl barley and cook in 3 cups (720ml) water for 30 minutes. Drain and set aside.
Step 3
Place salmon fillets on a baking tray, brush each with 2 tbsp mango chutney, and season with salt and pepper. Bake for 15-18 minutes.
Step 4
Heat olive oil in a skillet and sauté roast peppers for 3-4 minutes.
Step 5
Serve salmon with pearl barley and roast peppers.
