Meal prep chicken burritos

This shit is popular, but is it easy? Yes. I call this a Mexican-Arabic Chicken Crossover. Absolutely bangin. Pair with burger sauce or spicy mayo and tzatziki. Caution: they come out dry, but, as with most things, it's all about the sauce. If you're cooking this for immediate consumption (not for meal prep), you can use 4-ingredient flatbreads instead of tortillas: https://s.samsungfood.com/RfCUz.

Instructions

Step 1
Prep the chicken by mixing all the ingredients.
Step 2
Heat the oven to 190°C.
Step 3
Lightly oil a baking tray, cover it with baking paper and spread out the chicken. Roast (mixing halfway) for 30-45 mins until it's no longer pink in the middle.
Step 4
Whack the peppers and onions with olive oil into the oven in a ceramic dish. Roast until soft.
Step 5
Make the rice and when ready, mix with tomato puree, paprika, and beans (optional).
Step 6
And now, ladies and gentlemen, we proceed with the assembly. Make the burritos and wrap them tightly in aluminium foil. Stuff into a freezer bag and dump into the freezer with a date & content label.
Step 7
TO REHEAT: Thaw the burrito(s) in the fridge overnight (I haven't yet tried warming them up from frozen). Warm up in the oven at 180°C for 10-15 mins (?) et voila.
