For the compote

Step 1
In a blender crack the eggs

And in the oats and bananas
Step 3
Blend until smooth about 30 seconds

Put a pan on medium heat and add in the butter

Pour in the pan small circles of batter (as big as you want your pancakes)

Cook for two minutes then flip and cook on the other side for another two minutes

Then take off the heat and repeat with remaining batter
For the compote

In a saucepan on medium heat, add in the blueberries and lemon juice cook for ten minutes stirring occasionally
Step 9
Take off the heat and let cool for five minutes
Step 10
Pour in the chia seeds and stir
Step 11
Serve over pancakes
