Instructions

Chicken Preparation

Step 1
In a small bowl, mix shawarma seasoning ingredients
Step 2
Pat the chicken dry and slice into bite-sized pieces. In a large bowl, add the chicken, the seasoning and about 1 tsp salt. Toss to coat. Add the onion, lemon juice and olive oil. Toss again. Cover and refigerate for 2 hours or overnight.
Step 3
Position one rack in the center of the oven and another 4-5 inches under the broiler. Preheat the oven to 425 F. Brush a 13x18 sheet pan with olive oil
Step 4
Spread the chicken and onion in a single layer on the sheet pan. Roast on the middle rack until the thickest piece is cooked through. Broil for a minut or two to crisp chicken.

To Serve

Step 5
Divide the cooked chicken among 4-6 bowls. Add other ingredients and serve
