Fragrant Chicken Saag Masala with Pilau Rice

Instructions

Step 1
Peel and finely slice the onions and garlic
Step 2
Heat a drizzle of vegetable oil in a pan and cook onion until softened. While cooking, add spinach to a colander and poor over boiled water until it is wilted. When cooled chop roughly

Add the sliced garlic, fenugreek, garam masala and chilli flakes to the onion and cook for 30s
Step 4
Add the chicken thighs to the pan and cook for 3 mins on each side until they are lightly browned
Step 5
While the chicken is browning, make a tomato stock:- dissolve the vegetable stock mix, tomato paste and 1 tsp sugar in 350ml of boiled water
Step 6
Add tomato stock and chopped spinach to the chicken mix. Reduce the heat and simmer with lid on for 15-20 mins until the chicken is cooked through and the sauce has thickened
Step 7
While the chicken is simmering, melt a knob of butter in a rice pan, crush cardamom pods and add them to the pad with the star anise and cook for 1 min to release the fragrance
Step 8
Add the basmati rice to the pot and cook for 1 more min, stirring the rice to coat, then add 300ml water, add the lid and bring to boil. Once boiling, reduce to a low heat and cook covered for 10-15 mins until all the water has been absorbed. Remove from heat and keep covered until served.
Step 9
Shred the chicken and add back to the pan. Roughly chop coriander and stir through the rice. Serve together, topped with some of the chopped coriander
