Ingredients
5 servings
Whole chicken
roasted according to instructions
1onion
medium, chopped
1clove garlic
crushed
¾ teaspoondried oregano
½ cupblack olives
stones in
170ggreen beans
chopped into bite sized pieces
1tomato
large, chopped into pieces
1 teaspoonlemon zest
1 tablespoonsred wine vinegar
1juice of lemon
small
salt
pepper
spinach leaves
Feta
optional
Instructions
Step 1
Roast whole chicken according to instructions. Or if using chicken breasts, season with salt and pepper and saute in a little olive oil over medium heat until just done (about 5 mins a side).

Step 2
Let chicken cool. Pull all meat off (if using whole chicken). Pull meat apart into bite sized pieces.
Step 3
Cook green beans in water for 10-15 mins or until soft

Step 4
Cook onion in oil in fry pan until soft.
Frying Pan
Step 5
Add garlic and oregano to pan and cook one more minute.
Step 6
Add olives, cooked beans, tomato, and lemon zest to pan and stir until heated through.
Step 7
Add chicken to pan and season with vinegar, salt, pepper, and lemon juice to taste.
Step 8
Serve hot or cold on a bed of spinach leaves, with feta sprinkled over (if using)
